25+ Lebanese Vegan Recipes
Ingredients
- 1 pound 15 bean soup mix
- 1 large onion- sliced into thin slices
- 1 medium onion- processed in food processor
- 1 tablespoon cumin
- 1/2 cup coarse bulgur
- 6 cups water
- Salt- start with 1 teaspoon
Instructions
- Rinse beans and drain. Sort any unwanted debris.
- Place beans in a large pot of cool water. Cover and allow to soak at least 8 hours or overnight. After soaking, drain water.
- Add water ( about 6 cups) to cover the drained beans.
- Place over medium high heat, bring to a boil, then partially cover, reduce heat to medium low and simmer, stirring it occasionally until the beans begin to break down, about 50 minutes.
- Stir in thin slices of onions and bulgur. Simmer until bulgur is fully cooked.
- Meanwhile, in your food processor, add onion and cumin and process until well blended.
- Add to the the soup and cook for an additional 10 minutes.
- Adjust seasoning as desired, and serve hot.
- ENJOY!

These dishes look so yummy. Being of Lebanese origin I make these all the time at home. You might want to rename these as vegetarian not vegan since dairy products are not for the vegans.
