Mediterranean Lamb Chops
I love recipes that don’t need a lot of planning, and this one has become a go-to in my kitchen, especially if you have a meat-loving family like mine. Some days you just don’t have the time (or patience) to marinate, but you still want something that feels special and full of flavor.
I simply season the lamb chops with salt, black pepper, and allspice, throw them on high heat, and within minutes, dinner is ready. They’re incredibly versatile too, the perfect addition to any salad or served on their own with a few simple sides. Ingredients
- 8 lamb chops
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon allspice
How to Season Lamb Chops (Mediterranean Style)
Pat the lamb chops dry, then rub them with olive oil. Sprinkle generously with salt, black pepper, and allspice, making sure to coat both sides evenly.
This simple Lebanese-style seasoning gives incredible flavor without the need for marinating. It’s actually the same flavor base I use in my Lebanese steak shish kabob, which makes both recipes perfect to pair or alternate for easy Mediterranean-style meals.
Cooking Methods (Grill, Pan, or Oven)
Grilled Lamb Chops (Best Flavor)
Preheat your grill to high heat.
Place the lamb chops directly on the grill and cook for:
- 3–4 minutes per side for medium-rare
- 4–5 minutes per side for medium
Pan-Seared Lamb Chops
Heat a skillet or cast-iron pan over high heat.
Add a drizzle of olive oil, then add the seasoned lamb chops and cook:
- 3–4 minutes per side
Let them develop a deep golden crust before flipping.
Oven Method
Sear first if possible, then transfer to a preheated oven at 200°C:
- Cook for 5–7 minutes depending on thickness
Or bake directly for about 10–12 minutes, flipping halfway.

The Secret to Perfect Lamb Chops
The key to juicy, flavorful lamb chops is simple:
Cook on high heat for a few minutes on each side
Let the chops rest for a few minutes before serving to lock in the juices.
